So what you need before learning how to preserve meat with salt is fresh meat. You can also use fresh meat purchased from the butcher.
Before you begin the process, it’s important to examine the house thoroughly. This means checking the temperature of all the storage rooms with the help of a thermometer. You can opt for the unheated spots of the house, attic, storage shed, or shelters.
The goal is to find an area that has the lowest temperature. Colder environments help in preserving meat in a much better manner.
How to preserve meat with salt: The curing method
What you will need:
Jars or crocks to store the meat
Moisture-proof paper or plastic
The curing method is considered to be the easiest when it comes to preserving meat. It is a quick process that involves the use of pickling salt and brown sugar.
Combine the meat with salt
Slice the meat into slabs, preferably 4-6 inches. Mix 1/4 cup brown sugar with 1/2 pound pickling salt. This should be sufficient for meat weighing 12 pounds.
Cover these slabs of meat with the salt and brown sugar mixture. Then pack them into sterilized jars or crocks. The containers need to be secured in a tight manner. You can also cover the slabs of meat with cheesecloth.
Store the meat
Once you’ve figured out the suitable location, it’s time for storage. But please make sure that the temperature of that particular room or area is not lower and higher than 36 degrees and 38 degrees Fahrenheit respectively. This is the optimal temperature level if you want to learn how to preserve meat with salt.
Take out the meat from storage
It is advisable to store the meat in this cold environment for a month. Following which you can cover or wrap the slabs of meat in any moisture-proof paper or plastic.
Now you have a fresh batch of salt-cured meat for all types of occasions.

Another way of preserving meat: The brining method
Preserving meat is something that you can do with the help of the brining procedure as well. But it takes longer than the salt curing process. You start off by cutting the meat into slabs and placing them into sterilized containers such as jars or crocks.
Bring together a pound of curing salt and 1/2 cup brown sugar in a bowl of water. Then pour this mixture over the meat ensuring that the liquid reaches every part of it. It’s important that you cover the whole meat with the mixture.
Store this coated meat in a room with a temperature level of 36 degrees Fahrenheit. After a week of storage, remove the meat from brine. Stir this brine well before repacking the meat. Repeat this process at least four times over a span of 4 weeks.
If you find the brine to be stringy or thick, then it’s best to withdraw the meat. Get rid of the brine before sterilizing the jars again. Wash every slab of meat and repack them. Prepare new brine and put the whole thing into storage once again. After the fourth week, the meat is ready to go!
Getting back to simpler methods or preparing for emergency situations requires you to have access to a fresh source of protein. Once the meat is extracted, it’s ready to be placed under preservation.
